I have a tasty Sunday breakfast recipe for you! These delicious gluten-free and low FODMAP waffles with lemon curd and strawberries.

A nice recipe to make for Mother’s Day, but it is also great for any brunch or breakfast.

I made a basic gluten-free and low FODMAP waffle recipe and I topped the waffles with some lactose-free Greek yogurt, lemon curd, and fresh strawberries.

How to make low FODMAP waffles

It is very easy to make low FODMAP waffles. You need the following ingredients:

  • Gluten-free flour mix: I use Schär Mix It Universal
  • Baking powder
  • A pinch of salt
  • A little bit of white sugar
  • An egg
  • Lactose-free milk: I used semi-skimmed milk
  • Sunflower oil or baking spray

I have a basic waffle maker and that works fine for this recipe.

To make the waffles you simply put all ingredients together to make a batter. You spray the waffle iron with some baking spray or brush some oil on it. And then you can put the batter into the waffle maker.

This recipe makes about 4 low FODMAP waffles.

Are you going to try the gluten-free and low FODMAP waffles?
