Low FODMAP waffles with lemon curd and strawberries
I have a tasty Sunday breakfast recipe for you! These delicious gluten-free and low FODMAP waffles with lemon curd and strawberries.
A nice recipe to make for Mother’s Day, but it is also great for any brunch or breakfast.
I made a basic gluten-free and low FODMAP waffle recipe and I topped the waffles with some lactose-free Greek yogurt, lemon curd, and fresh strawberries.
How to make low FODMAP waffles
It is very easy to make low FODMAP waffles. You need the following ingredients:
- Gluten-free flour mix: I use Schär Mix It Universal
- Baking powder
- A pinch of salt
- A little bit of white sugar
- An egg
- Lactose-free milk: I used semi-skimmed milk
- Sunflower oil or baking spray
I have a basic waffle maker and that works fine for this recipe.
To make the waffles you simply put all ingredients together to make a batter. You spray the waffle iron with some baking spray or brush some oil on it. And then you can put the batter into the waffle maker.
This recipe makes about 4 low FODMAP waffles.

Ingredients
- 200 g (1 1/2 cup) gluten-free flour (I use Schär Mix It Universal)
- 1 tsp baking powder
- 1 pinch of salt
- 2 tbsp granulated sugar
- 1 egg
- 200 ml (3/4 cups + 1 tbsp) lactose-free milk
- 3 tbsp sunflower oil
- Optional: lactose-free Greek yogurt
- Optional: lemon curd (recipe or storebought)
- Optional: fresh strawberries
- A waffle maker
Instructions
- Stir gluten-free flour, baking powder, salt, and sugar together in a bowl.
- Add the egg, lactose-free milk, and sunflower oil.
- Grease the waffle iron with oil or cooking spray.
- Fill the plates of the waffle iron with batter. Bake the waffles for about 5-8 minutes until golden brown.
- Serve the low FODMAP waffles with some lactose-free Greek yogurt, lemon curd, and fresh strawberries.
