Low FODMAP tomato risotto with burrata

Still looking for a fancy, but not too difficult main course for Christmas? Then I have the recipe for you.

This low FODMAP tomato risotto with burrata looks luxurious and tastes delicious, but it’s actually not that difficult to make and you don’t need many ingredients.

The ingredients of the low FODMAP tomato risotto

The ingredients of this risotto are simple:

  • Stock: make sure you use low FODMAP stock cubes.
  • White wine: are you cooking for children or are you pregnant? Then you can leave this out.
  • Risotto rice
  • Tomato cubes: because this is the main ingredient of this risotto, I like to choose more expensive tomato cubes in this recipe.

    These are, in my opinion, tastier in terms of flavor. I like to use the Mutti tomato cubes with basil.
  • Spring onion: for a light onion flavor. Only use the green part.
  • Pepper, salt, fresh basil, and a little parmesan cheese: to further flavor the dish.
  • Burrata: I am a big fan of burrata. This is a fresh cheese made from cow’s milk and cream. Similar to mozzarella, but even creamier.

    Burrata has not been tested by Monash University. The burrata I used contains 1 gram of carbohydrates/sugars per 100 grams. But note: this differs per brand.

    For 1 person I use about 50 grams, so then you would be on 0.5 grams of sugars and therefore lactose.

    It is expected that a portion of 50 grams of burrata should be a safe low FODMAP portion for most people.

    If you are sensitive to lactose, you could also take a lactase pill when you eat lactose. Or you can use buffalo mozzarella instead of burrata. Mozzarella contains less lactose than burrata.

What to serve with this risotto?

As far as I’m concerned, with risotto and pasta, the following often applies: the fewer ingredients, the better the dish. But that often means that there are not a lot of vegetables in the dish.

That is also the case with this low FODMAP tomato risotto with burrata.

That is why it is nice to serve this risotto with a nice salad on the side. If you don’t tolerate fructose well or are still in the elimination phase, I don’t recommend choosing a salad with tomato in it or omitting the tomato.

Because the risotto also contains tomato, you will otherwise quickly exceed the permitted amount of tomato. For example, you can make a fresh cucumber salad or a carrot salad.

This melon salad with feta or this salad with cucumber and chickpeas (omit the tomato) are also good options.

Description

A fancy, but simple low FODMAP tomato risotto with burrata. Perfect as a main course for Christmas dinner or any other dinner. Gluten-free and vegetarian.


Ingredients

Scale
  • 1 liter (4 cups) stock (use low FODMAP stock cubes)
  • 100 ml (3.4 fl. oz) white wine (optional)
  • 400 g (14.1 oz) risotto rice
  • 400 g (14.1 oz) high quality tomato cubes
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 stalks spring onion, the green part
  • 50 g (1.8 oz) grated cheese
  • 1 burrata
  • Fresh basil

Instructions

  1. Heat some olive oil in a pan. Add the tomato cubes and fry for a minute.
  2. Add the rice and stir well.
  3. Add the wine and stir until incorporated.
  4. Add a tablespoon of stock. Wait until this is completely absorbed and stir occasionally.
  5. Then add another ladleful of stock. Repeat until the stock is used up and the rice is completely soft.
  6. Season the risotto with salt and pepper.
  7. Cut the spring onion into rings and stir it through the risotto.
  8. Stir the parmesan cheese through the risotto.
  9. Cut the burrata into quarters and divide over the risotto.
  10. Garnish with fresh basil

    Nice recipe. Tried and turned out good and tasty. I had no burrata so i used some Greek full cream yoghurt.
