Low FODMAP carrot salad
This is a super simple side dish that we used to eat regularly at home when I was a kid. A delicious fresh low FODMAP carrot salad with a yogurt dressing, banana, and raisins.
I find this ideal as a side dish because carrots are one of the few low FODMAP vegetables that can be eaten in large quantities. You only have to watch out when you eat a portion larger than 500 grams.
That is why a side dish with carrots is handy to combine with a meal that also contains other vegetables. The recipe is so simple that it needs almost no explanation. I make a simple yogurt dressing with lactose-free yogurt, mayonnaise, a dash of lemon juice, and salt and pepper.
I also add some slices of banana and raisins to the salad. It goes very well with carrot and the yogurt dressing. Raisins and banana are limited low FODMAP, so I only use a few raisins for the taste.
You only need a few minutes of work and then you have a delicious side dish on the table!
