Low FODMAP weekly meal plan #6
While I am writing this, it is raining outside, it is cold and windy and it got dark at four already. That means that the dark days have begun and in a way, I love that! I am going to put up the Christmas tree this week and make my house cosy with a lot of fairy lights. And then I will snuggle on the couch under a blanket with a warm bowl of food. Ahh. The recipes in this weekly meal plan are a mixture of comfy and healthy, a good balance!
Monday – Mexican lettuce wraps
We start Monday off healthy with Mexican lettuce wraps! These wraps are low carb but super tasty. And is low carb not your thing? Then just replace the lettuce with tacos!
Tuesday – Mushroom polenta with goat cheese
A simple vegetarian meal! I love this dish because it contains two kinds of mushrooms. I always get surprised reactions on this recipe: “huh, but mushrooms aren’t low FODMAP right?” It is true that normal mushrooms are not low FODMAP, but canned mushrooms (up to 100 g per portion) and oyster mushrooms are. How good!
Wednesday – Tempeh goreng
Tempeh goreng! If you are a tempeh hater you should definitely try this recipe. It is almost impossible that you won’t like it when it’s prepared this way. Delicious to eat with some rice and veggies or with potatoes and a salad.
Thursday – Pasta with salmon and cream cheese
An old classic that I finally made low FODMAP. At least, I am quite sure that this is a common recipe in most Dutch households. Simple, but delicious!
Friday – Vegetarian taco bowl
I accidentally picked three vegetarian recipes for this week, I noticed, but that doesn’t matter because eating a little less meat now and then is good! I ate this vegetarian taco bowl 3 times in one week when I made it for the first time because oh, this is such good comfort food!
