Low FODMAP Sunday breakfast

When I was still living with my parents, we used to eat a special Sunday breakfast every Sunday morning. With bread rolls or croissants and eggs. On Holidays, we made it extra special with lots of delicious things and we would easily spend a few hours at the breakfast table. I loved it because I am crazy about breakfast. In the first few years of eating low FODMAP, I kind of lost the Sunday breakfast tradition. I often have a simple bowl of yoghurt for breakfast and that’s it. My boyfriend and I often eat our breakfast separately instead of making a low FODMAP Sunday breakfast together. Quite a shame because I always loved those family breakfasts.

That’s why I am very happy that Schär has different bread products now that are FODMAP certified. With these products we can make delicious breakfast recipes again! The following breakfast / lunch recipes from Schär are now FODMAP certified:

When Schär sent me a few of their FODMAP products to try, I knew immediately what I wanted to do with them: recreate my favourite Sunday breakfast recipes, so they were low FODMAP. I made three of my favourite breakfast recipes: toast with strawberries and chocolate, ciabattas with scrambled eggs and French toast.

I realized how much I loved creating a low FODMAP Sunday breakfast again and I really want to continue doing this. Create our own Sunday ritual with my boyfriend, like I used to have with my parents. As you might know, my boyfriend is from Slovenia and his family doesn’t really have the tradition to have breakfast together on Sundays. So I found it extra nice to show him how we are doing this. We have been living together for a year now, so it is time to start our own traditions 😉

Strawberry toast

What do you need?

How to prepare

  1. Grill the slices of landrot on a grill, use a grill pan or pop them in the toaster.
  2. Spread a thin layer of butter or margarine on the toast.
  3. Cut the strawberries into slices and divide them over the toast.
  4. Grate some dark chocolate on top of the strawberries.

Ciabattas with scrambled eggs

What do you need?

  • 2 eggs
  • A splash of lactose-free milk
  • 4 slices of dry ham
  • 2 Schär ciabatta rolls

How to prepare

  1. Whisk the eggs together with a splash of milk in a bowl. Season with pepper and salt.
  2. Cut the dry ham into pieces.
  3. Heat some butter in a pan. Add the eggs to the pan. Scramble the eggs until they are soft and glossy. Add the dry ham and shortly fry it. I usually take my scrambled eggs off the heat when they are still slightly undercooked. Because the pan is hot, they will cook a bit more after you turn of the heat and then they will be perfect.
  4. Cut the ciabattas open and spread some butter or margarine on top. Fill with the scrambled eggs and serve immediately.

Low FODMAP French toast

What do you need?

How to prepare

  1. Put the eggs together with the milk, vanilla sugar and cinnamon in a bowl and whisk together.
  2. Pour the mixture into a deep plate and dip the slices of bread into the mixture.
  3. Heat some butter in a pan and fry the French toast until both sides have browned.
  4. Serve warm.

    I have definite digestive issues. Was put on fructose-free diet. Very complicated. Came across your web sight and am going to give it a try. January and February sound very interesting with the challenge and all.

    I have 14 free range organic fed hens so we have a lot of delicious eggs. So a fried of poached egg and a slice of organic bacon and a little tomato on a toasted Schar Ciabatta that my husband has cleverly cut into 3 slices( one for a little marmalade) is a favourite Sunday breakfast. And I’ve just had a light supper with Schar panini toast, LFmap pate and lots of dark green lettuce from my garden as a double decker. I hope Tesco continues to sell them all their products are great. I love their crisp read too and also The chocolate Bourbon biscuits as an occasional treat.
