No semi-healthy gluten-free brownies with dates, sweet potatoes and other high FODMAP ingredients. I mean a gooey sugar bomb with a rich chocolate flavour. Sometimes you just need that!
For a while now, my supermarket has been selling gluten-free (and low FODMAP) Oreos, and I couldn’t wait to make low FODMAP Oreo brownies with them. I finally got around to making them, and they are PERFECT. If I may say so.
They are gooey, they have a rich chocolate flavour, they have many pieces of Oreo in them. They basically have everything that a perfect brownie should have.
The brownies taste best if you let them cool down completely and then put them in the fridge for a few hours. But I guess eating them warm with a scoop of low FODMAP ice cream on top wouldn’t be bad either…
I could continue to talk about these brownies for another hour, but I think you should just start making them. And.. make sure you have some people around that can help you eat them, because otherwise I fear that you will eat them all by yourself! 😉
Notes:
- Because these brownies contain quite a lot of sugar, I advise to only have one piece serving of these brownies at a time. Sugar is an IBS trigger and large amounts of sugar can give you problems.
- I use butter for the brownies. Butter contains very little lactose and is therefore tolerated by most people with a lactose-intolerance (because of this reason butter is considered to be low FODMAP). If you are very sensitive to lactose or if you have to avoid cow milk, you could try using milk-free margarine instead. I haven’t tested this myself, but I think this will work fine.

Low FODMAP Oreo brownies

Description
Low FODMAP Oreo brownies. Do I need to say more? Gooey, a rich chocolate flour and with pieces of “Oreo” or gluten- and lactose-free double cookies. Irresistible! Also gluten-free and lactose-free.
Ingredients
- 200 g dark chocolate
- 200 g unsalted butter
- 200 g brown sugar
- 150 g gluten-free self-raising flour
- 4 eggs (at room temperature)
- A pinch of salt
- One package of low FODMAP double cookies
- 30 x 20 cm (8×12 inch) baking tin
Instructions
- Pre-heat the oven to 180 degrees Celsius (350F). Cover the baking tin with baking parchment and grease the sides with some butter.
- Put the chocolate together with the butter in a pan and melt on low heat.
- Whisk the eggs with the sugar until creamy. Add the melted chocolate and butter while stirring.
- Carefully fold the self-raising flour and salt into the mixture using a spatula.
- Break the double cookies into pieces and stir half of them through the brownie batter.
- Pour the brownie batter into the baking tin and flatten the top. Divide the other half of the Oreo pieces over the brownie.
- Bake the brownies in the middle of the oven for 30-35 minutes. Leave to cool down completely and put them into the fridge until serving.

What is the brand of Oreo-like cookies that you found?
I use a Dutch brand, so I think that won’t be of any use for you. It is from the Dutch supermarket Albert Heijn. But there are quite a lot of brands that have gluten-free Oreo-like cookies. It is just important that you check that no high-FODMAP ingredients have been added.
