Creamy Mac and Cheese with chicken and spinach (low FODMAP)

In my blog post, about the Free From Food Expo I told you about the lactose-free cooking cream that I got from the owner of Lactosevrijwinkelen.nl*. Because I didn’t use cooking cream for a long time in my recipes, I used it immediately and made one of my favorite meals: ovenbaked pasta.  A silky creamy mac and cheese with chicken, spinach and loaads of cheese, mmm. 

Lately, I used lactose-free cream cheese when I wanted to make a creamy pasta sauce, like in my other creamy pasta recipe, but I didn’t use cooking cream for years. I didn’t know lactose-free cooking cream from Minus L existed (it is hardly sold anywhere in the Netherlands) and I do not tolerate soy so a soy cooking cream also wasn’t an option. 

With this cooking cream, I recreated a recipe that was one of my favourites in the past. My mum used to make a delicious creamy mac and cheese with chicken, spinach, mushrooms and a lot of cheese. This low FODMAP version doesn’t contain mushrooms, but is just as good!

What do you need (for 2 persons)

  • 100-160 gr gluten-free macaroni
  • 1 package (200ml) lactose-free cooking cream (I used Minus L)
  • 300 gr spinach
  • 200 gr chicken thigh fillet
  • 60 gr grated cheese
  • Parsley, oregano, cayenne pepper
  • Pepper and salt

How to prepare the creamy mac and cheese

  1. Pre-heat the oven to 180 degrees Celsius.
  2. Boil the macaroni according to the instructions on the package. Pick the amount of macaroni according to how much you eat.
  3. Cut the chicken thigh into strips. Heat some oil or cooking spray in a pan and fry the chicken thigh until it is cooked.
  4. Season the chicken with pepper, salt, parsley, oregano and some cayenne pepper.
  5. Add the spinach to the chicken and fry for a few minutes. Remove some of the liquid from the pan, otherwise, your macaroni dish will be too wet.
  6. Add the cooking cream to the chicken and the spinach in the pan and heat for a few minutes. Taste and add some extra pepper, salt and spices if necessary.
  7. Stir in half of the cheese.
  8. Grease an oven dish and put the pasta in. Divide the cream sauce on top. Stir everything together and sprinkle the other half of the cheese on top.
  9. Place the oven dish in the oven for 15 minutes.
