Coconut Chicken Rice Noodles (low FODMAP, gluten-, lactose-free)

When I come home after a long day of working from 8 till 5 (yes, I do that too sometimes, not daily, but sometimes) I am tired and I don’t feel like spending an hour in the kitchen. Buying a ready-made meal from the supermarket or ordering food is something I wouldn’t do quickly. But what do you do then? Then you make the coconut chicken rice noodles recipe from your mum! My mum makes the best and simplest coconut rice noodles. At home, they prefer eating this dish with normal noodles, but for fodmappers like me, it also works fine with rice noodles. And that is just as good!

Today I share her recipe for coconut chicken rice noodles with you. Thank you for your inspiration and your great cooking mum!

What do you need (for 4 portions)

  • 250 g rice noodles (if you can have gluten or do not have to eat low FODMAP you can also use normal noodles)
  • 400 g chicken breast
  • 320 ml coconut milk (a portion of 80 ml coconut milk is low FODMAP)
  • 1 zucchini
  • 1 bell pepper
  • 2 carrots
  • A splash of sweet soy sauce
  • Salt, pepper and paprika powder

How to prepare the coconut chicken rice noodles

  1. Cut the chicken breast into cubes and fry them in a pan with some oil. Season it with some pepper and salt.
  2. Bring a pan with water to boil.
  3. Cut the bell pepper in strips and the zucchini and carrot in cubes. Add this to the chicken breast when it is done. Fry the vegetables for a few minutes while stirring it through.
  4. Cook the rice noodles in the pan with boiling water according to the instructions on the package. Drain them when they are done.
  5. Add the can of coconut milk to the chicken and vegetables and let it simmer for a few minutes on a medium fire. Flavour with some salt, pepper and paprika powder and at the end add a splash of sweet soy sauce.
  6. Divide the rice noodles over four plates and put the sauce on top.
