Low FOFDMAP coconut chicken rice noodles in a bowl

Low FODMAP coconut chicken rice noodles

When I come home after a long day of working from 8 till 5, I am tired and I don’t feel like spending an hour in the kitchen. Buying a ready-made meal from the supermarket or ordering food is something I wouldn’t do quickly.

But what do you do then? Then you make the coconut chicken rice noodles recipe from your mum! My mum makes the best and simplest coconut rice noodles.

At home, they prefer eating this dish with normal noodles, but for fodmappers like me, it also works fine with rice noodles. And that is just as good!

Today I share her recipe for coconut chicken rice noodles with you. Thank you for your inspiration and your great cooking mum!
