Low FODMAP peppercorn sauce

Description

Homemade low FODMAP peppercorn sauce. Delicious to serve with a meat dish. For example at Christmas dinner. Gluten-free and low in lactose.


Ingredients

Scale
  • 1 tbsp black peppercorns
  • 2 tbsp butter
  • 2 tbsp gluten-free flour (I use a gluten-free flour mix, like Schär Mix It Universal)
  • 200 ml (6.8 fl. oz.) beef stock
  • 100 ml (3.4 fl. oz.) lactose-free cream
  • 2 tbsp whisky
  • A pinch of salt

Instructions

  1. Crush the peppercorns with the side of a large knife or with a mortar.
  2. Make the stock with the beef stock and 200 ml boiling water. Set aside for a moment.
  3. Heat the butter in a saucepan.
  4. Add 2 tbsp gluten-free flour and stir well with a whisk. Let it cook for about 2 minutes.
  5. Then add the stock little by little while stirring well.
  6. Also add the lactose-free cream and bring the sauce to the boil while continuing to stir.
  7. Then add the whiskey and the crushed peppercorns.
  8. Turn the heat down and let the sauce simmer for a few more minutes. 
  9. Taste the sauce and season with a pinch of salt.
