Description
Homemade gluten-free chicken cordon bleu! With gluten-free bread crumbs, ham and cheese. Delicious as a main course for Christmas dinner. Low FODMAP and low lactose.

- 4 chicken breasts
- 4 slices of ham (check the ingredients to make sure it is low FODMAP)
- 4 slices of Gouda cheese
- Gluten-free flour mix (I use Schär Mix It Universal)
- Gluten-free brand crumbs (I use Schär gluten-free bread crumbs)
- 2 eggs
- Salt and pepper to taste
Instructions
- Preheat the oven to 180 degrees Celsius.
- Fold the chicken breasts open lengthwise. Place between two sheets of cling film and flatten the chicken filets to about half a centimeter with a meat mallet or rolling pin.

- Place a slice of ham and a slice of cheese in the middle of the chicken breast.

- Fold the sides of the chicken breast slightly inwards.

- Then roll the chicken into a tight roll. This prevents the cheese from leaking out later.

- If necessary, prick the sides together with some half toothpicks. Warn your guests that you have stuck toothpicks in the meat or remove them yourself immediately after baking because you don’t want people to choke on a toothpick.
- Beat the eggs and put them in a deep plate. Put the gluten-free flour and gluten-free breadcrumbs in two other deep plates.

- Coat the chicken cordon bleu in the flour. Make sure all sides are covered. Then coat them in the egg mixture and finally in the breadcrumbs.

- Heat a large amount of oil in a pan and fry the cordon bleu briefly on each side, so that the breadcrumbs stick well.
- Then place the cordon bleu on a baking sheet lined with baking paper. Bake them in the oven for 20 minutes until the chicken is completely cooked.
