I love the simplicity of the Italian kitchen. This low FODMAP truffle pasta is a good example of this. 5 ingredients and delicious! Gluten-free.

- 160 g gluten-free spaghetti
- 2 tbsp truffle-infused olive oil
- 2 tbsp butter
- 60 g parmesan cheese
- Black pepper
Instructions
- Bring a pan with water to boil. Put the spaghetti into the pan and add a little bit of olive oil and a pinch of salt. Cook the spaghetti according to the instructions on the package.
- When the spaghetti is almost cooked, put some butter, the olive oil and black pepper to taste into another pan. Heat on low heat until the butter has melted and
turn off the heat. - Drain the spaghetti and save 100 ml of the water. Add half of the water to the butter and the olive oil in the pan and add the spaghetti. Stir this together on medium heat.
- Add the cheese and stir vigorously. Continue to stir until the cheese melts and the pasta gets a creamy coating. Add some extra pasta water if it doesn’t get creamy enough.
- Divide the pasta over two plates and serve immediately. Sprinkle some extra parmesan cheese and black pepper on top. It is nice to serve the pasta with a salad on the side.
