Description
This low FODMAP tiramisu was requested a lot! A gluten-free and lactose-free tiramisu. Perfect as a dessert after a nice dinner.
Ingredients

- 500 g (17.6 oz) mascarpone, at room temperature
- 200 ml (6.8 fl. oz) espresso
- 5 egg yolks*
- 80 g (2.8 oz) sugar
- 1 tbsp lemon juice
- 3 tbsp almond liqueur or 1 tsp almond extract
- 200 g (7 oz) ladyfingers
- A pinch of salt
- 1 tbsp cocoa powder
- Some dark chocolate to grate
- A dish
Instructions
- Mix the mascarpone with 10 drops of Intoleran lactase drops. Stir well, cover, and put in the fridge for 24 hours so that the lactose can digest.
- Make 200 ml of strong coffee or espresso and then put it aside to cool.
- Beat the egg yolks with the sugar until creamy. Beat until the mixture is light yellow and very fluffy, for about 4 minutes.
- Briefly stir the mascarpone in another bowl. Add a dash of lemon juice.
- Carefully fold the egg yolk mixture into the mascarpone until fluffy. Do this by hand, not with a mixer.
- You can quickly overmix the mascarpone and then it becomes very thin.
- Prepare the bowl in which you want to serve the tiramisu.
- Put the coffee in a bowl. If you want to make this tiramisu with alcohol, you can stir the almond liqueur through it. If you want to make it alcohol-free, stir in 1 tsp almond extract.
- Dip the ladyfingers one by one in the coffee mixture on both sides, so that they are well soaked with coffee.
- Divide half of the ladyfingers over the bottom of the baking dish. Put half of the mascarpone mixture on top and smooth it out. Repeat this with the second half of the ladyfingers and the rest of the mascarpone mixture.
- Put the tiramisu in the fridge for at least 4 hours or preferably overnight to set.
- Sprinkle with a generous layer of cocoa powder before serving. I also really like to grate some dark chocolate over it.
