Description

A delicious low FODMAP speculaas tiramisu. Tiramisu with Dutch speculaas cookies to make a delicious dessert. Also gluten-free and lactose-free.


Ingredients

Scale
  • 125 ml lactose-free whipping cream
  • 75 g white sugar
  • 4 egg yolks
  • 500 g lactose-free mascarpone
  • Optional: 5 tbsp coffee liqueur
  • 200 ml espresso
  • 200 g gluten-free and FODMAP speculaas + 2-3 extra to crumble on top (you could substitute this with gingerbread cookies if you can’t find speculaas)
  • 1 tbsp cacao powder
  • An oven dish

Instructions

  1. Whisk the whipping cream with 15 g of the sugar into stiff peaks.
  2. Whisk in another bowl the egg yolks together with the rest of the sugar until it forms a creamy mixture.
  3. Mix the mascarpone little by little into the egg yolk mixture.
  4. Gently fold the whipped cream into the mixture.
  5. Put the espresso into a deep plate and stir in the coffee liqueur, if you use it.
  6. Dip half of the speculaas cookies into the espresso mixture and put them with the coffee side on top into the oven dish.
  7. Spoon half of the mascarpone mixture over the speculaas cookies.
  8. Repeat the process for the other half of the speculaas cookies.
  9. Refrigerate for at least 2 hours or overnight.
  10. Crumble 2 or 3 remaining speculaas cookies over the tiramisu before serving.

Notes

This recipe contains raw eggs, so it is not suitable for pregnant women.
