Description

I made a delicious low FODMAP broccoli soup with celeriac to imitate the traditional Dutch split pea soup, but without peas. A green and filling winter soup!


Ingredients

Scale
  • 1.5 liter (6 cups) stock (use a low FODMAP stock)
  • 400 g (2.5 cups) celeriac
  • 2 leeks, only the green part
  • 1 large carrot (about 2 cups)
  • 200 g (1 1/8 cups) broccoli heads
  • 2 bay leaves
  • 1 low FODMAP smoked sausage*
  • Optional: the green of 3 stalks of spring onion
  • Optional: pieces of baked bacon

Instructions

  1. Peel the celeriac and cut into cubes. Shop the green part of the leeks. Cut the carrot into cubes and the broccoli into florets.
  2. Put all vegetables, the celeriac and the bay leaves in a pan and pour the stock on top.
  3. Leave to boil until the vegetables are soft (about 15 minutes) and remove the bay leaves. Blend the soup with an immersion blender until smooth. Season with pepper and salt.
  4. Cut the smoked sausage into pieces and add to the soup. Leave the soup to simmer for half an hour on low heat.
  5. If you want to add bacon: bake it in a separate pan and add to the soup when you serve it.

Notes

*If you cannot find a similar smoked sausage that is low FODMAP, you can also leave this out.
