Description
Simple low FODMAP peanut butter cookies with only 3 ingredients. Healthier than classic peanut butter cookies. Gluten-free and lactose-free.

- 100 ml (1/2 cup) maple syrup
- 175 g (3/4 cup) peanut butter, smooth
- 90 g oat flour (1 cup)
Instructions
- Combine the peanut butter and maple syrup in a bowl. Place this in the microwave for 20 seconds, so that both are slightly softer and you can easily stir them together.
- Now put them in a larger bowl together with the oat flour and mix until you have a dough.
- Place in the refrigerator for 30 minutes.
- Preheat the oven to 180 degrees Celsius (350 F).
- Divide the dough into 12 balls with your hands. Place these on the baking tray and flatten them into round cookies.
- Take a fork and make a cross over each cookie with the fork.
- Bake the cookies in the oven for 10-12 minutes. Then let them cool completely.
