Description

Simple low FODMAP peanut butter cookies with only 3 ingredients. Healthier than classic peanut butter cookies. Gluten-free and lactose-free.


Ingredients

Scale
  • 100 ml (1/2 cup) maple syrup
  • 3/4 cup peanut butter, smooth
  • 90 g oat flour (1 cup)

Instructions

  1. Combine the peanut butter and maple syrup in a bowl. Place this in the microwave for 20 seconds, so that both are slightly softer and you can easily stir them together.
  2. Now put them in a larger bowl together with the oat flour and mix until you have a dough.
  3. Place in the refrigerator for 30 minutes.
  4. Preheat the oven to 180 degrees Celsius (350 F).
  5. Divide the dough into 12 balls with your hands. Place these on the baking tray and flatten them into round cookies.
  6. Take a fork and make a cross over each cookie with the fork.
  7. Bake the cookies in the oven for 10-12 minutes. Then let them cool completely.
