
Simple Tuesday: Sweet potato bake with cottage cheese
Last week I made a quick sweet potato bake with cottage cheese. Only five ingredients, as you may expect from a Simple Tuesday recipe and the preparations only cost 20 minutes. After that the dish has to go in the oven for 10 minutes and then you have a meal on the table!
Simple and good!
What do you need (for 2 persons)
- 300 g sweet potato
- 300 g fresh spinach
- 200 g cottage cheese
- 2 tomatoes
- 40 g grated cheese
- Salt, pepper and cumin
Notes for Fodmappers
- This recipe is not low FODMAP: the maximum amount of sweet potato is 70 g. A portion of spinach is 38 g. Portions higher than 150 g are not advised. I have passed the elimination phase and can therefore play with ingredients a bit more, for me these amounts work well 😉 In the elimination phase it is advised to keep to the recommended portion sizes.
How to prepare the sweet potato bake with cottage cheese
- Pre-heat the oven to 220 degrees Celsius.
- Peel the potatoes and cut them in pieces. Boil them for six minutes in water with some salt added until they are soft. Drain the potatoes and set them aside.
- Cut the tomatoes in pieces and remove the seeds.
- Heat some oil in a pan and bake the spinach in a few minutes. Add the tomatoes and a tablespoon of cottage cheese and stir through. Flavour the mixture with salt, pepper and cumin. Remove the pan from the heat.
- Divide the mixture over a greased oven dish.
- Cut the boiled sweet potatoes in slices and put this on top of the mixture. Divide the rest of the cottage cheese on top and finally sprinkle the grated cheese on top.
- Put the oven dish in the oven for 10 minutes.
