Savoury oatmeal with mushrooms and goat cheese

Eww, savoury oatmeal, what are you trying to tell me, Karlijn! I know that you are probably thinking this now but wait. Savoury oatmeal is really something you should try. I am very attached to my sweet breakfast in the morning and I wouldn’t change that for a savoury breakfast anytime soon, but this savoury oatmeal is amazing. Oatmeal has a very neutral flavour, so you can use whatever you like to make it tasty. We often do this with sweet things, such as fruit, but savoury ingredients go really well too.

To me, the structure of this savoury oatmeal reminds me a bit of a risotto. It is a healthy meal and I love to eat it for lunch. You can also put it in a box and take it to work, so it is also a very convenient meal. The combination of mushrooms and goat cheese is so good! If you want to make this recipe vegetarian, you can use fresh spinach instead of roast beef and bake the spinach before you add it to the oatmeal. I think that would be a great combination too.

What do you need (for 1 serving)

  • 30 g oats
  • 200 ml unsweetened almond milk
  • 50 g roast beef (slices that you usually put on a sandwich)*
  • 50 g canned mushrooms, drained and rinsed
  • 30 g fresh goat cheese
  • Optional: fresh parsley
  • Pepper and salt

*You can also use a smoked ham, like serrano ham instead of roast beef.

How do you make the savoury oatmeal

  1. Put the almond milk and the oats together in a small pan and bring to boil.
  2. Leave the oatmeal to simmer on low heat for 1-3 minutes and stir now and then.
  3. Tear the roast beef into pieces and add it, together with the mushrooms, to the oatmeal. Stir together and leave to warm up for a few minutes. Season with salt and pepper.
  4. Put the savoury oats into a bowl and crumble the goat cheese on top. Finish with some fresh parsley.

    I’ve been meaning to try savory oats, as an alternative to sweet breakfasts. I know sugar’s hard on digestion. I’ll definitely keep this recipe in mind–thanks Karlijn!

    Ive been having oats, grated carrot and cinnamon for a while now, grated raw carrot.. its actually amazing.
