Pommes Duchesse
Yeeeeees it is almost Christmas! I have been counting down for weeks, this really is my favourite time of the year! I have also been thinking about Christmas recipes for the Christmas dinner a lot and I already tried several of them. Amongst others these Pommes Duchesse. Because of the name and the festive shape that they have, I have always associated this potato dish with Christmas.
In the past, we regularly bought deep-frozen pommes duchesse in the supermarket. You only had to bake them in the oven. Very easy. But the pommes duchesse from the supermarket often contain wheat or onion- and garlic powder and therefore it is not low FODMAP.
Luckily it is very easy to make it yourself. You only need potatoes, butter and an egg and a piping bag with a piping nozzle to pipe the pommes duchesse. And you must admit that pommes duchesse looks way more festive than a lump of mashed potato.
Tip: to make it even more fun, you can also use sweet potato instead of normal potato. In this way, you can serve two different variances of pommes duchesse at the Christmas dinner!
What do you need (for 4 persons)
- 700 g potato
- 50 g butter (you can replace this for margarine to make this recipe entirely lactose-free)
- 1 egg
- Pepper, salt and nutmeg
- A piping bag with an open star piping nozzle
How to prepare the pommes duchesse
- Pre-heat the oven to 190 degrees Celsius.
- Peel the potatoes and cook them in a pan with boiling water for about 20 minutes until they are done.
- Drain the potatoes and mash them with a potato masher.
- Add the butter and the egg and stir everything together. Flavour the mashed potato with salt, pepper and a bit of nutmeg.
- Line a baking tray with baking parchment.
- Spoon the mashed potato into the piping bag. Make sure there is no air left in the piping bag.
- Pipe rosettes from about 3-4 centimetres on the baking tray. You can do this best by holding the piping nozzle straight above the baking tray and making a light circling movement while piping.
- Bake the Pommes Duchesse for about 25-30 minutes in the oven until the outside has browned lightly.
Notes for Fodmappers
If you use sweet potato, note that sweet potato is low FODMAP up to 70 g per portion. So make sure to limit your intake if you eat low FODMAP.
