Parmesan truffle fries

I totally joined the truffle hype in the past year. Truffle burgers, truffle fries, truffle pizza, truffle sauce, I can’t get enough of it. Even though I find the smell of truffle oil quite overwhelming, I love the flavour. My absolute favourite combination is truffle oil with fries or wedges and so you can understand that I picked this recipe for my blog: parmesan truffle fries! It is the best thing in the world and soooo easy to make!

The truffle flavour in the soft potato fries and then that crunchy outside with a cheese crust. Ohhh, only writing this just makes me wish that I had a bowl of fries in front of me now.

Truffle oil has not been tested on FODMAPs yet. Truffles themselves are probably high in FODMAPs because most kinds of mushrooms are too. But because garlic is also high in FODMAPs and garlic-infused oil is low FODMAP, I expect truffle-infused oil to be low FODMAP too. I would advise you to try this recipe after you have finished the elimination phase.

What do you need (for two large servings)

  • 500 g firm potatoes with skin
  • 30 ml (about 3 tbsp) truffle-infused olive oil
  • 30 g parmesan cheese

How to make the parmesan truffle fries

  1. Pre-heat the oven to 200 degrees Celsius (390F).
  2. Clean the potatoes well and remove dark spots. Cut them into fries.
  3. Put the fries into a bowl and sprinkle the truffle oil on top. Toss the fries around with your hands, so all fries have been covered in oil.
  4. Sprinkle the parmesan cheese over the fries too and toss. You can also add the cheese after baking the fries instead of before, so you’ll have melted cheese on top of your fries. I preferred the crunchy cheesy crust that the fries get when you bake the cheese.
  5. Line a baking sheet with baking parchment and put the fries on top.
  6. Bake the truffle fries in the oven for about 25 minutes.
