No-bake gluten-free Cookie Dough Bars

Description

No-bake cookie dough bars made of low FODMAP, gluten-free and lactose-free cookie dough. Not healthy, not sugar-free, but so good! A real guilty pleasure.

Instructions

  1. Grease an oven dish or baking tin or layer with baking paper.
  2. Press the cookie dough into the tin and even it out.
  3. Melt the chocolate au bain-marie or in the microwave. Pour the chocolate over the cookie dough. Spread it over the dough with the back of a spoon, so you get an even layer of chocolate.
  4. Put the cookie dough bars into the fridge for a few hours for the chocolate to set. If you are very impatient you can also put them into the freezer for a shorter time. But the bars are best when they are cold.
  5. The cookie dough bars are quite heavy, therefore I cut the bars that you see on the pictures in half another time. This recipe makes about 16 bars.

Notes

As I also noted in the recipe for cookie dough, too much fat and sugar (and chocolate, which is a combination of both) can also trigger IBS complaints. Therefore, I advise eating one cookie dough bar per serving maximum.
