Low FODMAP weekly meal plan #4 – October

I can’t believe that October is over already. It’s crazy how time flies. I have just finished making my planning for the Sinterklaas (a Dutch holiday), Thanksgiving and Christmas recipes and I am ready to start cooking for the festive season. The next few weeks I will keep the meals that I eat simple and I try to focus on healthy eating. I would like to lose a few kilos and I know how difficult I always find the month of December. Now I still have a relatively calm period and I can cook delicious and healthy meals. Therefore, this week a week with healthy recipes!

Monday – Low FODMAP poké bowl with salmon

This is one of my most favourite healthy meals ever. If fresh salmon wasn’t so expensive, I would eat it every day. This poké bowl has only healthy ingredients and is só good!

Tuesday – Tomato soup with meatballs

I love to eat soup in this season. It is easy to make and you can make a big batch of soup at once. Because the basis of most soups is vegetables, it is often really healthy. If you want to make this soup super healthy, you can leave out the meatballs, but I prefer my tomato soup with!

Wednesday – Risotto with spinach pesto

This risotto with spinach pesto is thé favourite of my mum and sister. They made this recipe several times already because they loved it so much. Vegetarian comfort food!

Thursday – Thai yellow curry with shrimps

When I made this recipe, I made curry paste from scratch for the first time and that worked super good. I immediately feel like making this recipe again, yum!

Friday – Vegan polenta pizza

Pizza, but super healthy! This pizza has a quinoa crust and the entire pizza is only 400 calories! You can add some cheese if you don’t want to have pizza without cheese, but then you’ll just have some extra calories 😉
