Low FODMAP weekly meal plan #2 – September
This week is the official start of autumn, but if you ask me, it already started last week. When I got drenched in a rain shower and almost blew off my bike because of the storm. When I wondered whether I should start wearing my winter jacket because I was so cold. And when I turned on the heating at home for the first time. Jup, that really is autumn. On the one hand I hate it, but on the other hand, it is good because I love autumn food and the cosiness of being at home, putting on some candles and sitting on the couch under a blanket. The low FODMAP weekly meal plan for this week has warm soups, recipes with pumpkin and casseroles. Autumn food!
Monday – Tortilla soup
We start easy on the Monday with a tortilla soup. I think this must be my favourite soup recipe on the blog right now. It is só tasty and it really is a filling soup that you can have for dinner. Perfect for a rainy day!
Tuesday – Skinny Mexican casserole
It is September, so that means we can go crazy on pumpkin again! Casseroles are my ultimate autumn comfort food. Warm, creamy and with a layer of melted cheese. And you can use your leftover tortillas from the tortilla soup in this recipe.
Wednesday – Polenta with tomato sauce and minced meat
Polenta is a dish that I got to know in the mountains of Italy. It is super versatile, easy to prepare and perfect for autumn. A hearty, warm, comforting dish (sorry for the low-quality picture, this is an older recipe from my blog).
Thursday – Baked pasta with chicken and cream cheese
Thursday used to be pasta day in our house and the entire family was always looking forward to Thursday night dinner. This baked pasta with chicken and cream cheese is inspired by a recipe from Jamie Oliver and it tastes divine. I could have this for dinner every day!
Friday – Low FODMAP pizza
Friday is thé perfect day for pizza. With this pizza recipe, I made the best gluten-free pizza ever. You really cannot distinguish that it is gluten-free and that almost never happens with gluten-free pizzas. De-li-cious!
