Low FODMAP food diary of a healthy day
I thought it would be fun to share with you what I eat on a day during the FIT FODMAP challenge. What do I eat on a healthy day? This food diary is from a Saturday and also includes one of my treats. I had quite a healthy cheat because I had healthy buckwheat pancakes for breakfast in a nice restaurant in Eindhoven. I must say I also didn’t feel like eating something sweet and this was perfectly fine as a treat for me. Since I have been eating healthier for two weeks now, I notice that I don’t crave sugar so much anymore. That is great!
Pre-breakfast – 9.00
Matic (my boyfriend) and I went to have breakfast outside today, but because we went pretty late, it was more brunch than breakfast. I already felt very hungry at 9, so I ate something small before we left. A small bowl of lactose-free yoghurt with a tablespoon of peanut butter (my guilty pleasure, I love 100% natural peanut butter with chunks of peanut, mmm). I forgot to take a picture of it.
Brunch – 11.00
We had brunch at The Happiness Kitchen in Eindhoven. A super cute restaurant where they really focus on healthy meals. They have a lot of gluten-free, vegetarian and vegan options. You have to be careful with the cakes because the gluten-free cakes often contain high FODMAP ingredients, but there are also options that are low FODMAP. I ate delicious gluten-free buckwheat pancakes with mixed seeds and coconut yoghurt. It was served with pieces of banana, blueberries and blackberries (blackberries are not low FODMAP so I gave those to my boyfriend). With the pancakes, I drank fresh ginger tea with lemon. A tasty and satisfying breakfast!
Snack – 13.00
As a snack, I had one of my favourite healthy snacks. Two pickles rolled into a slice of ham. It looks horrible in a picture, but it is super tasty! Make sure to always check the ingredients when you buy pickles because sometimes high FODMAP ingredients are added.
Dinner – 17.00
Because we had our brunch at 11.00, we felt quite hungry at 17.00, so we had an early dinner. I made Wiener schnitzels with gluten-free flour and breadcrumbs. My boyfriend loves those, his mum often makes this for the traditional Slovenian lunch and he didn’t eat them in a long time. We ate celeriac fries with it and fried bell pepper and mushrooms (canned). Super yummy!
Snack – 20.00
In the evening, I snacked on some macadamia nuts on the couch, 30 grams. I always measure the number of nuts that I eat because otherwise I easily eat half a bag and that is a LOT of calories. I also drank a cup of ginger tea. During the day, I only drank tea and water.
