Low FODMAP cucumber bites

If you ask me to whip up a cake for a party, I couldn’t be more excited to do that, but if I have to come up with party snacks, I am usually a little less excited.

My party snacks usually are tortilla chips with dips and some cucumbers and tomatoes. I just never have so much inspiration for party snacks.

So this year for NYE, I thought I should get a little more creative and I made these low FODMAP cucumber bites. Tasty, easy to make and healthy (and that is quite nice after all the Christmas food)!

Description

Simple low FODMAP cucumber bites to serve at a party. Cucumber filled with tuna salad, egg salad and cream cheese. Gluten-free and lactose-free.


Ingredients

Scale
  • 2 cucumbers
  • 1x this recipe for low FODMAP tuna salad
  • 1x this recipe for low FODMAP egg salad
  • Lactose-free cream cheese
  • Roasted bell pepper (I use bell pepper from a jar, make sure no garlic is added)

Instructions

  1. Cut the cucumbers in slices of about 1.5 cm. Carefully scoop out a little of the insides with a teaspoon.
  2. Scoop tuna salad into 1/3 of the cucumber slices and scoop egg salad in another 1/3 of the cucumber slices. Fill the other cucumber slices with a bit of cream cheese. Drain the roasted paprika and cut into small pieces. Top the cream cheese with a few pieces of paprika.
