Description

Making homemade low FODMAP caesar dressing? That’s simple! With this recipe you make a delicious caesar dressing in 5 minutes. Gluten-free & lactose-free.


Ingredients

Scale
  • 2 anchovy fillets (from a tin)
  • 3 tbsp mayonaise
  • 1 tbsp lemon juice
  • 1/2 tsp white wine vinegar
  • 25 g (1/4 cup) parmesan cheese
  • Black pepper and salt
  • Olive oil

Instructions

  1. Cut the anchovies into small pieces and put it in a bowl together with all the other ingredients (except for the pepper and olive oil). Blend into a smooth sauce with an immersion blender.
  2. Add some pepper to taste.
  3. Taste the dressing. Add some more anchovy, parmesan cheese or salt to taste. If you want a bit more sour, you can add some more lemon juice or vinegar. It is all about creating the right flavour here, so just taste and add more salt or sour when you feel the dressing needs it.
  4. If you want to make the dressing a little more liquid, you can add a splash of olive oil at the end and stir everything together.

Notes

Storing: you can store the dressing in the a closed jar in the fridge for up to a week.
