Description
A low carb poké bowl with carrot rice and salmon. Suitable for a SIBO diet and the low FODMAP diet. Gluten-free and lactose-free.

For the poké bowl
- 400 g (14.1 oz) carrots
- Optional: 40 g (1.4 oz) white rice (if you use the rice, you can lower the amount of carrots to 300 g)
- 200 g (7.1 oz) cucumber
- 80 g (2.8 oz) red bell pepper
- 60 g avocado (1/4 avocado)
- 1 sheet of nori
- 2 stalks of spring onion, the green part
- 200 g (7.1 oz) smoked salmon
For the sauce
- 1 tbsp mayonnaise
- 1 tsp lactose-free Greek yogurt*
- 1 tsp lemon juice
- 1/2 tsp grated ginger
- A pinch of salt
- A pinch of chili powder
Instructions
- Peel the carrots. Pulse them in a food processor until you have fine crumbs.
- If you use regular rice: boil it according to the instructions on the package.
- Divide the carrot rice and normal rice over 2 bowls and put aside.
- Wash the cucumber and the red bell pepper and cut into small pieces.
- Cut the avocado into cubes.
- Cut the nori sheet into small pieces and the spring onion into rings.
- Cut the smoked salmon into pieces.
- Mix all ingredients for the sauce together in a bowl.
- Divide the smoked salmon, cucumber, red bell pepper, avocado, nori, and spring onion around the sides of the bowls.
- Scoop the sauce in the middle and serve.
Notes
*Omit if you are still in the limited phase of the SIBO diet.
On the SIBO diet, soy sauce is not allowed, which is why I don’t use it in this recipe. If you don’t follow a SIBO diet, you can of course add some soy sauce to your poké bowl.
