
Low FODMAP lemon mousse with lemon curd
Today is a good day, I am still working today, but tonight I am going on holiday to Italy ánd I have a scrumptious dessert recipe for you (sorry I just LOVE that word)!

The dessert I am so enthusiastic about is a delicious recipe for a lemon mousse with lemon curd. I shared the basic recipe for lemon curd last week and now I made a yummy dessert with it.

A light lemon mousse made with lactose-free whip cream and lemon curd and a crumble layer of gluten-free cookies.
I used the gluten-free oat cookies by Verkade (only available in the Netherlands), which can be found in the cookie aisle since a few weeks. This makes me so happy!
Gluten-free (and low FODMAP) cookies next to the normal cookies. More and more choice for us!
The combination of cookie crumbs with the mousse is perfect: soft sour lemony mousse with crunchy cookie crumbs. So so good!


Low FODMAP lemon mousse with lemon curd

Description
A delicious light lemon mousse with lemon curd and cookie crumbs. The perfect summer dessert! Low FODMAP, gluten-free and lactose-free
Ingredients
- 200 gr lemon curd + a bit extra
- 200 ml lactose-free whipping cream
- 100 gr gluten-free cookies of your choice
- Optional: 4 strawberries for garnish
Instructions
- Make the cookies into crumbs, for example by putting them into a zip-lock back and crushing them with a rolling pin or by using a food processor. Divide the cookie crumbs over four glasses and save some for decoration.
- Whisk the cream together, using a mixer, with two tablespoons of sugar until stiff. Add the lemon curd and whisk until you get a creamy mixture.
- Divide the lemon mousse mixture on top of the cookie crumbs in the glasses.
- Finally, dollop a teaspoon of lemon curd on top of the lemon mousse and finish with the last cookie crumbs.
- Optional: decorate each glass with a strawberry
