Low FODMAP lemon mousse with lemon curd
I have a delicious and super quick dessert for you: low FODMAP lemon mousse with lemon curd. This recipe is not only low FODMAP, but also gluten-free and lactose-free.
And it is really super easy to make. You only need 4 ingredients and you can prepare the dessert in fifteen minutes.
It’s ideal to serve as a dessert at Christmas dinner or in the summer after a nice BBQ. You know for sure that you don’t spend a lot of time making the dessert.
A simple gluten-free and lactose-free dessert
This dessert is gluten- and lactose-free. You make the crumb base for the mousse with gluten-free and low FODMAP cookies of your choice.
In addition, you need lemon curd for this recipe. You can make it yourself with my recipe for lemon curd.
Or you can use storebought lemon curd if it is low FODMAP.
This recipe uses butter. Butter contains almost no lactose due to the processing. As a result, most people with lactose intolerance can tolerate it.
If you have to eat strictly lactose-free, you can also replace the butter with lactose-free margarine.
The main ingredient of the mousse is, in addition to lemon curd, lactose-free cream.
You can garnish the lemon mousse with some fresh fruit. I always like strawberries. That is the fourth and last ingredient.
Making low lactose cream
When I make this dessert for a dinner party, where not everyone has to eat lactose-free, I often use normal cream that I make lactose-free with Lactase Drops.
Normal cream is a lot cheaper than lactose-free cream. So that saves some money.
How do Lactase Drops work?
Lactase Drops from Intoleran contain the enzyme lactase. This enzyme helps to break down the lactose in products.
This actually works just like lactase pills that you take, but then you add the Lactase Drops to the dairy products in which you want to break down the lactose. This makes the product low in lactose.
You can use Lactase Drops in dairy products that are not sour. It does not work well in sour dairy products, so you cannot use it in yogurt, for example.
But it does work for milk, cream, and cream cheese. In the image below, from Intoleran, you can see how many drops you need for each dairy product.
For the recipe for low FODMAP lemon mousse, you need 250 ml lactose-free cream. So you add 5 drops of Lactase Drops.
Stir this well and put the (unwhipped) cream in the refrigerator for 24 hours. After the waiting period, the lactose in the cream is almost completely digested and your cream is low in lactose.
Don’t have time to wait 24 hours? Then you can also add 20 drops at once and use it immediately.
I think this is a waste of drops, so I always try to plan the recipe so that I prepare the cream the day before by adding the drops.

How to make the low FODMAP lemon mousse
Making this lemon mousse is really a piece of cake. All you have to do is whip the cream and carefully stir in the lemon curd.
In addition, crumble the cookies and divide them over the bottom of 4 glasses. Then put the lemon mousse on top and garnish it with some fresh fruit of your choice.
Super easy, but it is a very tasty dessert that everyone will love!

Description

Ingredients
- 200 g (7 oz) lemon curd + a bit extra
- 250 ml (1 cup) lactose-free cream
- 100 g (3.5 oz) gluten-free and low FODMAP cookies of your choice
- Optional: strawberries for garnish
Instructions
- Make the cookies into crumbs, for example by putting them into a zip-lock back and crushing them with a rolling pin or by using a food processor. Divide the cookie crumbs over four glasses and save some for decoration.
- Whip the cream, using a mixer, until stiff. Add the lemon curd and whisk until you get a creamy mixture. Mix only shortly after adding the lemon curd. The mousse has to be very light and airy. If you overwhip the mixture it can become too thin.
- Divide the lemon mousse mixture on top of the cookie crumbs in the glasses.
- Finally, dollop a teaspoon of lemon curd on top of the lemon mousse and finish with the last cookie crumbs.
- Optional: decorate each glass with a strawberry
