Healthy pineapple ice cream (low FODMAP)
You really cannot count on the Dutch summer weather. Last week, when I made this recipe, it was very warm and this week it has been rainy, cloudy and sticky most of the time.
But it is still summer, so I think I should just share summer recipes with you. Rain or no rain. Hopefully, the sun will be back soon!
Today I have a delicious recipe for healthy pineapple ice cream for you! It only has three ingredients, not a lot of calories and the ice cream is super creamy and refreshing. A real treat, that also fit into a healthy lifestyle. You could even have it for breakfast!
You simply put frozen pineapple, coconut milk and maple syrup together in a blender and two minutes later you have super refreshing pineapple ice cream!

Description
Healthy pineapple ice cream with 3 ingredients and 90 calories per serving. You can even have it for breakfast! Low FODMAP, gluten-free, lactose-free, vegan
Ingredients
- 300 g frozen pineapple
- 120 ml canned coconut milk
- 2 tbsp maple syrup
Instructions
- Put all ingredients together in a blender.
- Blend until you have a smooth mixture and serve immediately!

Would almond milk be ok instead? I do this as sorbets all the time. 🙂

Yes you can! Just make sure to take it out of the freezer a while before you want to serve it. Otherwise it will be very hard
Does the maple syrup give it much flavor? Not a fan of maple syrup.
You can definitely leave the maple syrup out!
Full fat coconut milk?
I used full-fat coconut milk. But I don’t think it is necessary to use full-fat. Lower fat might also work 🙂

What would a serving size be?

This tastes great but it does have quite a gritty texture. I guess pineapple is quite fibrous or maybe my food processor isn’t as good yours!
Just made the ice cream this evening using
full fat coconut milk and maple syrup but substituted frozen strawberries for the pineapple and halved the recipe…it was delicious and ate both servings! Have IBS but am also terribly dairy intolerant (not just lactose intolerant) so I am rused to craving ice cream that I can’t have …. this took the place quite nicely! Thank you so much for the delicious recipe ! I’m sure a good I will be craving this afternoon and plan to make it using different fruits like pineapple in your recipe… did you use fresh or canned pineapple ?!
Can you use frozen blueberries to make this?
There seems to be more calories in this recipe then 90!

Are you using a low fat tin of coconut milk?
Can you just clarify as it says 1 serving 120 ml of coconut milk 300g of pineapple. Sounds like a very big portion?
