Homemade gluten-free fish fingers (low FODMAP, lactose-free)

Good old fish fingers, I felt like eating those lately. Plain cod fish is nice, but I think it is best with a crust around it. A pile of potatoes or fries on the side, some mayonnaise, a salad and you have a delicious dinner. I made gluten-free fish fingers, which are also low FODMAP and gluten-free

Fish fingers are such a nostalgic meal to me. Something that feels typically Dutch (i know they have them everywhere, but we love them in Holland). We actually call them fish sticks instead of fingers. Everybody I knew grew up with fish fingers. At my best friends’ house, they even had fish fingers on bread for breakfast every Saturday morning. Even though I found that very strange at the beginning, it is very good! For this recipe I’ll stick with fish fingers for dinner, but you can have them for breakfast too if you prefer.

I used oat flour in this recipe. If you don’t have this at home you can also use oats and grind them in a food processor. To make it easy I used square blocks of cod fish, which I cut into two pieces. You can also use cod filet, but then you will get different shapes of fish fingers

The gluten-free fish fingers do not look perfect, in some places you can see the cod fish through the batter. I still wanted to share the recipe anyway, just to show you that not every recipe is perfect. They did taste very good and that is where it is about in the end. 

What do you need (for 4 fish fingers)

One serving is two fish fingers

  • 200 g codfish (I used 2 rectangular pieces which I cut in two)
  • one egg, beaten
  • 40 g oat flour (if you do not have this you can also make it yourself by grinding oats in a food processor)
  • Salt, pepper and parsley

How to prepare the gluten-free fish fingers

  1. Cut the codfish into strips.
  2. Put the beaten egg on a plate and the oat flour on another plate. Mix the spices through the flour.
  3. Dip the strips of fish first into the egg and then through the oat flour. Make sure all sides have been covered. Repeat those steps if necessary.
  4. Heat some oil in a pan and bake the fish fingers for about 6-8 minutes until all sides are done and have slightly browned.
  5. Nice with some fries or potatoes and salad!
