Making your own gluten-free chicken tenders is super easy. You only need a few ingredients:

  • Chicken breast, cut into strips: I made slightly larger pieces, but you can cut them smaller if you prefer bite-sized tenders.
  • Eggs
  • Gluten-free flour: I used Schär Mix It Universal, but any gluten-free flour blend works.
  • Gluten-free breadcrumbs: I used Schär’s gluten-free breadcrumbs.
  • Spices of your choice: I used salt, pepper, chili powder, and paprika powder

Step 1. Place beaten eggs on one plate, gluten-free flour on another, and gluten-free breadcrumbs mixed with spices on a third plate.

Step 2. Dredge the chicken strips first in flour, then in egg, and finally in the breadcrumb mixture. Make sure they’re coated on all sides.

Step 3. Spray the chicken with cooking spray and air fry for 12 minutes at 400°F (200°C). Flip them halfway through and spray again for extra crispiness.

Step 4. Serve immediately with your favorite dipping sauce.

Serving suggestions

I love serving these gluten-free chicken tenders with a green salad and some fries or sweet potato fries from the air fryer (note: sweet potato is limited low FODMAP). They’re also great with rice and veggies.

Description

Super simple gluten-free chicken tenders baked in the air fryer. Delicious to serve with fries and a salad. Lower in fat, low FODMAP, and lactose-free.


Ingredients

  • 1 cup (about 3.5 oz / 100 g) gluten-free breadcrumbs
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon ground paprika
  • 2 large eggs
  • 1/3 cup (about 1.8 oz / 50 g) gluten-free flour
  • 14 oz (about 400 g) thin chicken breast strips
  • Air fryer parchment paper (or cut regular parchment paper to fit your air fryer basket)
  • Cooking spray


Instructions

  1. Mix the gluten-free breadcrumbs with all the spices and place them on a deep plate. Spread the gluten-free flour on another plate and beat the eggs on a third plate. Dip the chicken strips first in the flour, then in the egg, and then in the breadcrumb mixture.
  2. Line the air fryer with parchment paper and carefully place the chicken strips in the basket. Make sure they don’t touch each other too much.
  3. Spray the chicken strips with some cooking spray (I use olive oil spray).
  4. Air fry the chicken strips for 12 minutes at 400°F (200°C). Flip them halfway through and spray again with olive oil.
  5. Delicious to serve with fries, a salad, and a dipping sauce of your choice.
