Fruit pancakes
The famous banana-egg pancakes have been one of my favorite breakfasts for a long time. Some time ago I came up with the idea that you can probably also put different kinds of fruit into the pancake batter and I decided to add blueberries next to the usual banana. And so these fruit pancakes were born.
Perfect for a more fancy breakfast or lunch, for example for the Christmas breakfast!

Description
Healthy low FODMAP fruit pancakes, perfect for a fancy Christmas breakfast! Made with banana and blueberries. Gluten-free and lactose-free
Ingredients
For the pancakes
- 1 unripe banana
- 80 g blueberries
- 1 egg
- 80 ml (lactose-free) milk
- 120 g (gluten-free) flour
On the side
- Lactose-free quark, yogurt, or cottage cheese
- Blueberries or raspberries as a topping
Instructions
- Put the banana and the blue berries in a blender and blend them.
- Mix the eggs and the milk through the fruit.
- Add the flour and mix it through.
- When the mixture stays too thick, you can add some more milk.
- Heat some oil in a pan and bake the pancakes a few minutes on each side. I usually make several smaller pancakes, but you can also make 2 larger pancakes per person.
- Serve the pancakes with some yogurt or quark and fresh fruit.
