Dutch Vanilla Custard – Vla (low FODMAP)

Today I have a recipe for a Dutch classic for you: Vla. Vla is a Dutch custard dessert. Traditionally it is made with milk, egg yolks and sugar, but I share a simple version with you today. We have this dessert in many different flavors, but vanilla custard is eaten most. I came up with the idea to make Dutch vanilla custard when I was making my Tompouce recipe. I tasted the Swiss cream that I was preparing and I thought wow this tastes exactly like vla! Since I haven’t eaten vla in years (lactose-free vla doesn’t exist, unfortunately) it had to go on my list of recipes to make.

The recipe that I share with you today is incredibly simple. You don’t use any egg yolk, just custard powder, a bit of sugar, milk and a vanilla pod. I want to share the original recipe with you too another time, but for now, we go super simple. In 10 minutes your Dutch vanilla custard will be done and then you only need to let it cool down. It’s super good and tastes exactly like the vanilla custard from a carton that I used to eat when I was a kid. 

One totally random story: I can’t read the word vla without laughing anymore in an English context. A few years ago I introduced vla to a few of my exchange students friends. We used to have mentor dinners together and one evening we brought vla. They were quite surprised by the weird substance sold in cartons, but they found the name even weirder and they were going to let us hear that. For the next minutes, I was surrounded by people screaming VLAAAAAA VLAAAAA at me, like it was some monstrous substance that could attack you every minute. So, I can’t think about vla without seeing my friend screaming VLAAAAA into my face. *End of random story. This is probably a typical – you-should-have-been there story ^^

What do you need (for 4 portions)

  • 1 liter lactose-free milk
  • 50 g custard powder
  • 50 g sugar
  • 1 vanilla pod

How to prepare the Dutch vanilla custard

  1. Put the custard powder together with the sugar in a bowl. Add a few tablespoons of the milk and stir everything together until it forms a smooth thick mixture.
  2. Put the rest of the milk in a pan. Scrape the vanilla from the vanilla pod into the pan. Stir together and bring the milk to boil.
  3. Add the custard mixture to the milk while stirring continuously and continue to stir until the milk starts to boil again. The mixture will thicken quickly until it gets a custard-like substance.
  4. Turn off the heat and leave the vanilla custard to cool down. Stir the through the custard now and then while it is cooling down.
  5. Put the Dutch vanilla custard in the fridge until you serve it.

Ingredients
