Description
Cloud bread is egg white and cottage cheese bread. No-carb bread with only 2 main ingredients. 43 calories per bread. Keto, low FODMAP and high protein

- 3 eggs
- 50 grams (1.8 oz) cottage cheese*
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp Italian herbs
Instructions
- Pre-heat the oven to 150 degrees Celsius or 300 degrees Fahrenheit.
- Split the eggs.
- Whisk the egg whites together with the baking powder until it forms peaks. You can best do this with an electrical mixer.
- In another bowl whisk the cottage cheese and the egg yolks together.
- Carefully fold the egg yolk mixture into the egg white mixture using a spatula. Add the egg yolk mixture bit by bit, because the mixture has to stay airy.
- Carefully fold the salt and Italian herbs into the mixture.
- Layer a baking sheet with baking parchment and use a spoon to put 6 heaps of the mixture on the baking tray. Make sure that each heap is the same size and shape it into a circle using the back of a spoon. Leave a bit of space between each cloud bread.
- You can also make the cloud bread slightly smaller, then you can make about 10 breads with this recipe. I make 6 bigger ones.
- Bake the cloud bread in the oven for about 20 minutes until they have lightly browned. Watch them closely after 15 minutes, because if your oven bakes a bit faster, they can be done earlier.
Notes
*Cottage cheese is low FODMAP up to 40 grams per serving. This recipe makes 6 cloud breads. One cloud bread contains about 8 grams of cottage cheese. If you have to eat strictly lactose-free, you can look if you can find lactose-free cottage cheese to use for this recipe. Here in the Netherlands, you can find this in the store Ekoplaza.
