Healthy Banana Ice Cream Breakfast

This banana ice cream breakfast has been my favourite for quite a while. It is super simple and só good! When I tried to make banana ice cream for the first time I threw an entire banana (including the peel) into the freezer, it turned into a stone and I never managed to make the ice cream. Luckily I understood how to do it after this disaster and now I have been eating banana ice cream for breakfast for a while. It is so refreshing when it is warm! I prefer eating it with a large dollop of peanut butter on top, but with chocolate granola and fresh fruit, such as strawberries, it’s also wonderful.

You can vary it as much as you like. If you want a smaller portion you can only use fresh fruit as a topping or half of the granola. Today I am sharing this super easy recipe with you.

Note: ripe bananas are low FODMAP up to 1/3 banana per portion (33 g). 1 medium unripe banana is low FODMAP (100 g). Larger portions unripe banana (125 g or more) are high in fructans and therefore high in FODMAPs. Make sure you use an unripe banana in this recipe. It is important to test your own tolerance level for bananas. It is possible that you tolerate ripe banana’s and if that is the case you can keep using them.

What do you need (for 1 person)

  • 1 banana
  • 200 gr lactose-free quark (thick Greek yoghurt will do too)
  • 30 gr chocolate granola
  • Toppings of your choice, such as strawberries, blueberries, raspberries or extra slices of banana

How to prepare this Banana Ice Cream Breakfast

  1. Cut the banana into slices and freeze it the evening before.
  2. Put the quark together with the banana in the blender. Blend it into a smooth mixture and pour it into a bowl.
  3. Put the chocolate granola on top and the other toppings of your choice.
